    Pulled Pork Pizza with Ricotta and Caramelized Onion

    We all face the all-too-often problem of too many leftovers in the fridge. We stare into the fridge wondering what to do…often it just isn’t appealing to eat the same meal again – but what to do? Well, in my experience, you can make a pizza/flatbread/sandwich out of just about anything (and call it whatever you want). So when I had an array of leftover barbeque this week – I knew I would be able to eat it all without getting a little bored. But add some herbs, caramelized onions, and some cheese, and it’s a whole new meal. And everything tastes better on a homemade crust…it’s really a win/win.


    Pulled Pork Pizza with Ricotta and Caramelized Onions

    Served 4.
    Leftover potential: Though created to get rid of leftovers, it reheats as well as any pizza.

    Pizza Dough
    4 1/2 cups all purpose flour
    1 3/4 tsp salt
    1 tsp instant yeast
    1/4 cup olive oil
    1 1/2 cups water, warm

    olive oil, as needed

    1. Combine the flour, salt, and yeast in a large bowl or the bowl of a mixer. Add the olive oil and water and knead using your hands or the dough hook of a mixer. By hand, it will take about 10 minutes to get a smooth, developed mixture. By machine, it will take about 5-6 minutes. Cover the dough and let rise until double in size, about 30 minutes.
    2. Generously rub olive oil across a large baking sheet. Place the dough on top of it. Stipple the dough with your fingers until it becomes flatter and reaches the edge of the sheet. Let rest for 10-15 minutes.
    3. Stipple the dough again, this time reaching the desired flatness. Cover the pizza dough with desired toppings and bake.

    Pizza
    1 Tbsp olive oil
    1 onion, thinly sliced
    2 cups pulled pork (or more)
    7-8 dollops of ricotta cheese
    parmesan cheese, grated, as needed
    1 Tbsp chives
    red pepper flakes, as desired

    1. Preheat the oven to 425 degrees Fahrenheit.
    2. In a large saute pan, heat the olive oil over medium high heat. Add the onions and saute until beginning to caramelize. Lower the heat as to not burn the onions, and slowly cook until caramelized.
    3. Toss the pulled pork with the onions. Spread this mixture generously across the pizza dough, and dollop with ricotta cheese. Grate a little bit of parmesan cheese over the top. Sprinkle with chives and red pepper flakes as desired. Bake until the edges are crisp and the toppings are hot and bubbly. Eat immediately.
