    Equipment Spotlight: Microplane

If you have one, you know. It’s a tool I don’t think about all too often, but I am constantly reaching for. The microplane zester: use it for zesting citrus, grating fresh nutmeg, grating cheese, and shaving chocolate. Best of all – it’s cheap ($10-15 depending on the store) and very small (long but thin so it fits easily in a drawer or countertop tool container) so it doesn’t take up valuable kitchen space. It’s also virtually indestructable and easy to clean – an all around great tool.
